Chia seeds as an egg substitute 


Chicken eggs can be replaced very well with chia seeds and a very good tolerance is thus guaranteed. Mix one teaspoon of ground chia seeds with 3 teaspoons of water to form a gel consistency. The amount of chia gel produced is equivalent to a medium-sized egg.

A good egg alternative is applesauce. It is ideal as an egg substitute in moist figs and juicy pastries. Its sweet and sour taste almost disappears when baking, which is why it is often used. An egg in the recipe can be replaced by three tablespoons or around 80 grams of apple sauce.

Flaxseeds serve as a healthy egg substitute


Ground flax seeds can be used for a hearty, pinkish pastry or bread dough. Two tablespoons of healthy oilseeds mixed with three tablespoons of water replace an egg.

An egg can be replaced by two teaspoons of corn, potato or tapioca starch diluted with two tablespoons of sparkling water. One tablespoon of soy flour, lupine flour (be careful with lupine allergies), coconut flour and almond flour each replace an egg.

Soy flour is a popular egg substitute among vegans. It tastes slightly nutty, which not everyone likes. To get the good binding power of the egg, mix one tablespoon of soy flour with 1-2 tablespoons of water.

Recipe with egg substitute – scrambled eggs without egg


Even vegans don’t have to do without the taste of scrambled eggs. With the help of silken tofu, firm tofu and the addition of turmeric and spices, the traditional recipe can be interpreted in a healthier and more ecological way. Mash the tofu with a fork and fry lightly in a pan with a little oil. If desired, you can add soy milk to achieve the desired consistency. For seasoning you use a special seasoning salt – Kala Namak, which is rich in sulfur and gives the typical egg taste. Sprinkle with fresh dill and add a few drops of linseed oil.

With this recipe you can make egg whites without using eggs. From the chickpea or bean water, which is usually thrown away, you can easily and quickly make the vegan alternative of ice snow, also called aquafaba, yourself. Add 1/2 teaspoon of baking powder or tartar and the same amount of lemon juice to the chickpea water from glasses and tinned foods and whip through the starch content to form firm snow. The brine is usually better tolerated than the legume itself.

Vegan egg whites with egg substitute – made from flaxseed


A second vegan variant of conventional egg whites is obtained when flaxseed is boiled with water and sieved. The resulting mass can be whipped into fake egg whites with a mixer. Just make sure that the water has to simmer and not bubble, otherwise the ‘slime’ will be too thick and no longer filter through the hair sieve.

Animal egg alternatives


If you have been diagnosed with an allergy to chicken eggs, you should also be tested for a possible cross-allergy. The consumption of other animal eggs is excluded or, on the contrary, permitted through a medical diagnosis. In addition to chickens, geese, ducks, quail and the ostrich lay eggs. Quail eggs taste very similar to chicken eggs and are often sold in good grocery stores. They are mild, but it takes 4-5 of them to replace a single chicken egg. Duck, goose and ostrich eggs are characterized by a more intense taste. All four animal species can be processed as usual, only the hard-boiled protein in goose and ostrich eggs looks rather glassy and not so white. You can get different types of eggs directly from farmers or order them online.

Egg substitute in minced meat for meatballs


In the traditional preparation of meatballs, egg is always included in the ingredients. However, you can do without that and rely on low-fat quark or natural yoghurt. Three eggs are required for every 500 g of minced meat, each of which can be replaced by three heaping tablespoons of quark. In terms of taste, the meatball tastes neutral and not just quark. Another alternative is to add grated potatoes.

Many manufacturers now offer industrially manufactured egg substitutes. However, individual tolerance is questionable, which is why everyone has to test the products for themselves.
