Delicious recipe for veggie burgers with sweet potatoes and beans

Ingredients for 8 servings:
For the sweet potato patties:
1 1/2 cup of cooked quinoa
2 medium sweet potatoes
1/4 teaspoon salt
1 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon chili powder
1/4 teaspoon dried oregano
2 teaspoons of ground cumin
1/4 teaspoon black pepper
400 g can of black beans
For the chilli and lime mayo:
1/4 cup mayonnaise
1 teaspoon chili sauce
the juice of 1/4 lime
Further ingredients:
8 rolls
Lettuce, tomatoes, avocado, radishes
Preparation:
Preheat the oven to 200 degrees top / bottom heat. Line a baking sheet with parchment paper, wash the sweet potatoes, cut them in half and bake in the oven for about 30 minutes until they are soft.
Rinse and drain the black beans in a colander.
In the meantime, prepare the chilli and lime mayonnaise. Mix the mayonnaise with the chili sauce and the lime juice in a small bowl and set aside.
In another bowl, mix the salt, onion powder, garlic powder, chilli powder, oregano, cumin and black pepper and set aside.
Use a spoon to loosen the pulp of the potatoes around the skin. Put the drained beans and boiled sweet potatoes in a large bowl and mash them until the consistency is just a little lumpy. So it shouldn’t be completely smooth.
Now add the cooked quinoa and the spice mixture. Mix everything well with your hands and form 8 burger patties of the same size.
Line the baking sheet with parchment paper again and place the sweet potato patties on top. Brush each patty with olive oil and bake at 200 degrees for about 20 minutes. Then turn the patties, brush the other side with olive oil and bake for another 10 minutes.
In the meantime, peel and stone the avocado and cut into thin slices. Wash the lettuce and pat dry. Wash tomatoes and radishes and cut into slices.
Let the baked sweet potato patties cool down briefly. Then halve the rolls, put a dollop of chilli lime mayo on top, place the patty on top, top with the vegetables and a dollop of mayonnaise. The veggie burger is ready.
