Vegetarian lasagna with zucchini – delicious and healthy dish


Lasagna is a delicious dish that adults and children will love. But especially before Easter, when many are fasting, the vegetarian lasagna is a cool alternative. We’ll show you a simple and healthy recipe with vegetables. Time for preparation – 1 hour.

Vegetarian lasagna with zucchini – ingredients


For this vegetarian lasagna you will need the following ingredients:

– 1-2 cans of tomatoes / 3 teacups of tomato puree / – Total weight 450 grams

– 2 medium sized eggs

– Three medium-sized zucchini

– 1 onion / 4 cloves of garlic if desired /

– 200 gr. Shredded mozzarella, 300 gr. parmesan, 50 gr ricotta

– 1 pack of lasagne sheets / approx. 12 pieces/

– 1/2 tea cup of sunflower oil

– Salt, freshly ground black pepper, oregano

First wash and dice the vegetables (onion, garlic cloves and zucchini) and then fry them in a pan until done. Add the can of tomato / tomato puree and cook on medium heat for 10 minutes. In the meantime, stir the eggs, add the ricotta and 150 grams of the shredded parmesan, season with salt and pepper. Cook the lasagne sheets in a large saucepan until almost done. When the tomato sauce and lasagne sheets are ready, preheat the oven to 200 degrees. Brush the bottom of an oven dish with the tomato sauce, then lay out the lasagne sheets and sprinkle with 1/3 of the ricotta and egg mixture. Then sprinkle 1/4 of the mozzarella and 1/4 of the rest of the parmesan on top. Then lay out the next lasagne sheets again so that they overlap slightly. Scatter the ricotta and egg mixture, mozzarella and parmesan again. Continue until you have laid out 4 layers of pasta sheets and 3 layers of sauce. Then cover the baking pan with aluminum foil and bake in the oven for 20 minutes. Then remove the foil and bake for another 10-15 minutes. Let the finished lasagna rest for 15 minutes, then cut and serve.

Prepare vegetarian lasagna – a quick dish


Duration – wash, dice and cook vegetables – 15 minutes. So that it goes faster, let the lasagne sheets cook at the same time. As soon as the vegetables are ready, prepare the eggs / ricotta mixture / 2 minutes /. Lay out the lasagne sheets – 5 minutes. Bake the lasagna – 30-35 minutes. Total time – about 55 minutes.
