  • 110 grams of almond flour
  • 50 grams of erythritol
  • 60 grams of butter at room temperature

  • 220 grams of light cream cheese at room temperature
  • 110 sugar-free white chocolate
  • 230 grams of Greek yogurt
  • 1 teaspoon vanilla extract
  • 60 grams of vanilla protein powder
  • 180 grams of raspberries, fresh or frozen and thawed
  • 30 grams of melted white chocolate

Preparation:

  • Preheat the oven to 200 degrees and line a 26 centimeter diameter springform pan with baking paper.
  • Mix the ingredients for the crust well in a bowl and knead into a dough with your hands.
  • Pour the batter into the springform pan and press it flat against the edge with your fingers.
  • Bake for 11-13 minutes or until golden brown and allow to cool.
  • In the meantime, melt the cream cheese with the white chocolate in the microwave for 30-60 seconds.
  • Add the Greek yogurt and protein powder and stir everything well.
  • Spread the cheesecake filling evenly on the base, reduce the oven temperature to 180 degrees and bake for 25 minutes.

Preparation:

  • Preheat the oven to 160 degrees.
