We give you three variants with which you can get through the summer tasty and refreshed. All ingredients listed are for 12 servings.

Surprise the family with a fruity dessert. The recipe for the “Pavlova” cake with passion fruit, peaches and edible violet blossoms is super simple and even suitable for beginners. You need the following ingredients:

  • 150 ml egg white (you will need about 4 medium-sized eggs)
  • 220 g powdered sugar
  • 3 teaspoons of cornstarch
  • 1 teaspoon white wine vinegar
  • 300 ml whipped cream
  • 2 large peaches, cut into pieces
  • 3-4 passion fruit, 2 passion fruit cut into pieces, 2 pureed
  • Violets or other edible flowers

Preparation: Preheat the oven to 150 degrees Celsius with convection. In the meantime, separate the eggs. It is very important that you separate the egg whites cleanly and that they are at room temperature. Then put it in a clean bowl and beat it with the hand mixer until stiff. Then gradually add the icing sugar while stirring constantly on medium heat. Then stir the meringue mixture for another 3 minutes at full speed until foamy. At the end add the cornstarch and white wine vinegar to the meringue mixture and stir in. Pour the meringue mixture into a cake tin and place in the oven. Reduce the heat to 120 degrees Celsius and bake the Pavlova cake base for 1 hour. Then switch off the oven and let the cake base cool down in it for 40 minutes. Put the whipped cream and the pureed passion fruit on the cake and garnish with the peaches and the passion fruit pieces.

Homemade peach quark cake with cream

Creamy, fruity, refreshing and not too sweet: the peach yoghurt cake is the perfect summer dessert that your guests will be happy to treat themselves to a second piece. You need the following ingredients:

  • 285 g shortbread biscuits
  • 6 teaspoons unsalted butter, melted
  • 2 medium-sized ripe peaches, quartered
  • 4 packs of gelatin
  • 240 ml of cold water, divided into two glasses
  • 200 ml yoghurt mixed with 700 g quark
  • once 250 g of sugar and another 135 g of sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 120 ml whipped cream
  • 2 drops of food coloring, orange
  • 160 ml of hot water
  • 240 ml Prosecco

Preparation: Grease a springform pan with a diameter of 20 cm. Halve and chop the shortbread biscuits. This is how it works: First put the biscuits in a freezer bag. Then close the freezer bag and roll over it with a rolling pin. Optional: Put the biscuits in a deep bowl and then grind them with a hand blender. Then add the melted butter and stir to a smooth mass. Put the butter biscuit base in the springform pan, distribute it evenly and refrigerate for an hour. Put 3 peach quarters in a bowl, puree finely and then pass through a sieve. In another small bowl, mix 120 ml of cold water and 2 sachets of gelatine and leave to soak for 5 minutes. Then place the bowl in the microwave for 30 seconds at 800 watts until the gelatin is completely dissolved. In a bowl, add the quark and yoghurt, 250 g sugar, vanilla extract and lemon juice and stir to a smooth mass. Add the cream and melted gelatin and beat to a fluffy cream. Take the cake base out of the refrigerator and spread half of the cream on top. Chill for 10 minutes. In the meantime, add 255 g of pureed peaches and the food coloring to the rest of the cream and stir in. Take the cake out of the refrigerator and distribute the second, orange-colored cream layer evenly on the first. Chill for another 10 minutes. Now put the remaining 2 sachets of gelatine together with 120 ml of cold water in a bowl. Let the gelatin swell for 5 minutes, then microwave for 30 seconds. Now add hot water, 135 g sugar and Prosecco to the melted gelatin and let it cool for 5 minutes at room temperature. If foam forms on the surface, remove it with a cake server. Cut the remaining peaches into wedges and cover the cake with them. Spread half of the prosecco gelatine over the top and chill the peach and yoghurt cake for 30 minutes. Then take the cake out of the fridge and spread the other half of the prosecco gelatine over the first. Chill overnight.

Peach Melba Tart Bake Recipes for Summer with Berries

Peaches and berries are in the peach melba cake and make it a summery delicacy that is guaranteed to reap compliments. For the cake creation you need the following ingredients:

For the dough:

  • 350 g butter, soft
  • 300 g of sugar
  • 5 eggs
  • 240 g sour cream, at room temperature
  • 400 g flour with baking soda (a mixture of flour and baking soda, self-raising flour, is sold in the UK). Below is the recipe for the self-rising flour
  • 50 g corn flour, sifted
  • 2 teaspoons vanilla sugar

For the peach jam cream:

  • 1 kg (approx. Eight medium-sized peaches), pitted, peeled and cut into small pieces
  • 150 grams of sugar
  • 1 teaspoon vanilla sugar
  • 50 g butter, unsalted
  • 1 teaspoon flour
  • 1 sheet of gelatin
  • 750 g mascarpone

For the cake topper:

  • 100 g butter, unsalted and soft
  • 240 g powdered sugar, sifted
  • 750 g cream cheese, soft
  • 2-3 drops of pink food coloring
  • 2 handfuls of berries for garnish

Preparation of self-rising flour:  Mix 500 g flour, 1 packet of baking powder, 1/3 teaspoon baking soda and a pinch of salt and sieve. The mixture can be kept for six months.

Preparation of the cake: Freeze the berries. Preheat the oven to 160 C and grease a springform pan. Put the butter and sugar in a bowl and mix with the hand blender to a thick mass. Gradually add the eggs and stir with the hand blender. Then stir in the sour cream first, then the vanilla sugar, the self-rising and the cornmeal. Divide the batter in two and bake each cake crust for 55 minutes. Then carefully remove from the springform pan and cut through.

Peach jam recipe: Put the sugar, the peaches, the vanilla sugar and the butter in a pan and bring to the boil. Then reduce the heat and simmer for 20 minutes, stirring constantly. Then let the syrup cool down at room temperature and sieve it off. Add the lemon juice to the tea and sweeten with the syrup, then chill.   • 830 ml coconut milk, cooled

Preparation: Mix all ingredients for the dough to a smooth mass, if necessary add 1 teaspoon of water. Roll out the dough on a floured worktop and distribute it evenly in a greased tart pan. Let rest for 30 minutes. Preheat the oven to 170 degrees Celsius with convection and bake the tart base for 15 minutes. For the cream, put the milk in a deep saucepan and bring it almost to a boil, then remove it from the heat and let it cool down. In the meantime, mix the egg yolks with the brown sugar and then stir in the flour, cornmeal and cinnamon. Then gradually add the milk and pour the milk mixture into a clean saucepan. Mix over medium heat and stir for 2-3 minutes until the mass thickens. Remove from heat, pour the milk mixture onto the tart base and distribute evenly. Let cool for 4 hours and then garnish with the peaches and cream. To do this, mix the butter, brown sugar and cream in a deep pan and bring to the boil. Simmer for 1 minute and then let cool for 2-3 minutes. Garnish the peach tart with the fruit and pour the brown butter and cream syrup over it.

  • 120 ml yogurt
  • 1 teaspoon vanilla sugar
  • 120 ml milk

To garnish:

  • 60 g butter, melted
  • 50 g brown sugar
  • 1/4 teaspoon cinnamon
  •  4-5 ripe peaches, cut into pieces

Preparation: Grease the baking pan with the melted butter. Scatter the brown sugar and cinnamon over the butter. Cover the bottom and sides of the baking pan with pieces of peach. First mix the dry ingredients for the cake and then mix the liquid ingredients in a separate bowl. Then mix all the ingredients together, stirring constantly, and pour the dough into the baking pan. Bake at 180 degrees Celsius for half an hour and then let cool down at room temperature. Then carefully remove the cake from the baking pan and turn it over.
