Make hamburger buns yourself: a classic burger bun recipe

Brioche burger buns make yourself a recipe for hamburger buns

For the perfect hamburger, you need perfect burger buns. The bread is just as important as the beef itself. It shouldn’t be too firm or too soft, but it should be fluffy. Furthermore, the bun should be able to withstand the meat and toppings without falling apart in your hands. Last but not least, the burger bun must also taste good without dominating the toppings. And here we have exactly the recipe that meets all of these requirements.

Ingredients for 8 rolls:

  • 250 ml of water, heated to about 40-45 ° C
  • 50 ml milk, slightly warmed to lukewarm
  • 1 package (7 g) dry yeast
  • 15 g (1 tbsp) white sugar
  • 1 large egg, whisked with a fork
  • 360 g bread flour (type 1050)
  • 40 g wheat flour (type 550)
  • 10 g fine salt
  • 35 g unsalted butter, at room temperature

Additionally:

  • 1 large egg
  • 15 ml of water
  • Sesame or poppy seeds to sprinkle (optional)

Let the yeast rise and make dough

Let dry yeast rise with lukewarm milk and water

In a small bowl, mix the warm water, warmed milk, yeast and sugar together. Let stand for about 5 minutes until it bubbles.

Mix the flour and salt in a large bowl. Add the butter and work it into the flour mixture with your fingertips to create even crumbs.

Put the yeast mixture and the beaten egg in the bowl and stir with a spatula or silicone spatula until a moist, sticky dough is formed.

Knead the dough

Knead sticky dough for burger buns properly

Scrape the dough off the bowl with a silicone scraper and place on a very lightly floured work surface. At this point the dough is very damp and sticky and cannot be kneaded as usual. You will be tempted to dust the dough with flour, but resist the urge.

Instead of kneading the dough as usual, you can pick it up with a spatula or silicone spatula and hit it back on the work surface. Use the scraper to turn it a few times on the work surface, then pick it up and open it again. Repeat this process for a few minutes. You should find that the dough is a little less sticking to the countertop. If you feel that the dough has stopped moving after a few minutes (it is still very sticky), dust the work surface lightly with flour and turn the dough to make it very lightly floured.

Continue twisting and flipping for a few more minutes. At some point, after about 5 minutes, the dough should no longer stick to the work surface. The dough will still be quite moist, but you should be able to shape it into a ball.

Let the dough rise

Burger bun recipe dough rise with yeast

Shape the dough into a ball and place in a greased bowl. Cover with a clean kitchen towel or cling film and let rise until the batter has doubled (approx. 1-2 hours). Note that this dough rises a little slowly. Let it go until it has doubled, no matter how long that takes.

Make your own hamburger buns: this is how you shape the buns

Divide the dough into 8 pieces with a spatula

Use a spatula to divide the dough into 8 equal pieces. If at this point the dough is still too sticky to form balls, dust it very lightly with a little flour.

Shape the dough into burger buns step by step

Shape each of the 8 pieces of dough into a ball. Just follow these simple steps:

  • Stretch the top part to get a smooth surface.
  • Turn over and stretch and pinch the sides towards the center.
  • Do this around the edges until the sides are smooth too.
  • Turn the ball over so the pinched part is facing down.

Let the homemade burger buns rise again on the tray

Bake hamburger buns with egg brush burger buns

Place the balls on a baking sheet lined with baking paper with a gap of approx. 5-7 cm. Cover loosely with a clean kitchen towel and let rise again until the dough has doubled again (approx. 1 hour more).

Place a large, flat baking sheet with water on the bottom rail of the oven. Preheat the oven to 200 ° C with the rack in the center of the oven.

When the buns have doubled, whisk the additional egg with 1 tablespoon of water and brush the buns with it thoroughly. Be sure to brush all of the bun, top and sides, all the way down into the pan, as any areas you leave out will be pale after baking. If you want, you can also sprinkle the rolls with sesame seeds or poppy seeds at this point.

Bake hamburger buns

Let the burger buns cool down on the kitchen rack

Bake the burger buns until the top is golden brown, about 15 minutes. Turn the tray 180 degrees after half the baking time. Immediately place the hamburger buns on a wire rack and let cool down completely. Only then cut through and cover with the selected toppings.
