For the perfect hamburger, you need perfect burger buns. The bread is just as important as the beef itself. It shouldn’t be too firm or too soft, but it should be fluffy. Furthermore, the bun should be able to withstand the meat and toppings without falling apart in your hands. Last but not least, the burger bun must also taste good without dominating the toppings. And here we have exactly the recipe that meets all of these requirements.

Ingredients for 8 rolls:

  • 250 ml of water, heated to about 40-45 ° C
  • 50 ml milk, slightly warmed to lukewarm
  • 1 package (7 g) dry yeast
  • 15 g (1 tbsp) white sugar
  • 1 large egg, whisked with a fork
  • 360 g bread flour (type 1050)
  • 40 g wheat flour (type 550)
  • 10 g fine salt
  • 35 g unsalted butter, at room temperature

  • Sesame or poppy seeds to sprinkle (optional)

In a small bowl, mix the warm water, warmed milk, yeast and sugar together. Let stand for about 5 minutes until it bubbles.

Scrape the dough off the bowl with a silicone scraper and place on a very lightly floured work surface. At this point the dough is very damp and sticky and cannot be kneaded as usual. You will be tempted to dust the dough with flour, but resist the urge.

Instead of kneading the dough as usual, you can pick it up with a spatula or silicone spatula and hit it back on the work surface. Use the scraper to turn it a few times on the work surface, then pick it up and open it again. Repeat this process for a few minutes. You should find that the dough is a little less sticking to the countertop. If you feel that the dough has stopped moving after a few minutes (it is still very sticky), dust the work surface lightly with flour and turn the dough to make it very lightly floured.

Continue twisting and flipping for a few more minutes. At some point, after about 5 minutes, the dough should no longer stick to the work surface. The dough will still be quite moist, but you should be able to shape it into a ball.

Ingredients for 5-6 rolls:

  • 100 g wholemeal spelled flour
  • 150 g wheat flour (type 550)
  • 3/4 teaspoon salt
  • 1 teaspoon instant dry yeast
  • 1 teaspoon fine sugar
  • 100 ml of lukewarm milk
  • 60-70 ml of water
  • 1 tablespoon of olive oil
  • Mix 1 egg yolk with 15 ml of water
  • Sesame seeds

  • Put the flour, salt, yeast and sugar in a large mixing bowl and mix with a whisk. Add the milk, water and olive oil. Mix with a fork until the dough comes together.
  • Place on a floured surface and knead for about 8 minutes until the dough is smooth.
  • Put the dough in an oiled bowl and let rise, covered, for 1 hour until the size of the dough has doubled.
  • Divide the dough into 5-6 equal portions and shape into balls.
  • Place on a baking sheet lined with baking paper. Cover with a tea towel. Let rise for another 35 to 45 minutes.
  • Preheat the oven to 210ºC.
  • Brush the top of the rolls with egg and sprinkle with sesame seeds.
  • Bake for 18-20 minutes, until the hamburger buns are golden yellow and baked through.
