The fufu is a West African dish. Although Ghana is considered its country of origin, the delicious dish is now prepared all over the continent, in the Caribbean and in South America (Cuba, Puerto Rico).

Traditionally, the dish is made from the fruits or roots of starchy plants such as yam, cassava and plantains and served as an accompaniment to spicy soups and stews. Fufu is characterized by its sticky consistency. It is therefore first portioned into small balls with the fingers and then added to the stew or soup. The fufu is usually not chewed because it sticks to the teeth, but is swallowed whole.

The first recipe is for fufu with peanut soup. If you let the soup thicken, then you can serve it as a sauce with the fufu. For the slightly spicy dish with a nutty note you need the following ingredients (for 4 servings):

  • 1 kg of cassava tubers
  • 1 kg of plantains

For the soup:

  • 4 zucchini
  • 1/2 pumpkin, medium size
  • 150 ml canned tomatoes
  • 4 tsp peanut powder, unsweetened
  • 4 cloves of garlic, peeled and pressed
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 4 cups of water
  • 1 large onion
  • 3 tbsp olive oil, extra virgin
  • Salt to taste

Preparation:

1. Rinse, peel and roughly dice the cassava bulbs. Bring the water to the boil, add 1 teaspoon of salt and cook the cassava tubers in the water until soft.

2. In the meantime, heat the olive oil in a medium saucepan. Chop the onion and sauté in the olive oil. Clean, peel and chop the zucchini and pumpkin. Then add to the onion and fry lightly. Finely puree all other ingredients for the soup in a blender. Add the finished soup mix to the vegetables and simmer the soup over medium heat for 30 minutes (or until it thickens if you want to make a sauce).

3. Peel the bananas, roughly cut them and finely puree them together with the cooked cassava tubers. Shape the mass into a ball.

The next recipe is the perfect mix of a fresh and spicy stew with chicken and a hearty fufu side dish. For the fufu with chicken stew you need the following ingredients (for 4 servings):

  • 2 teaspoons of rapeseed oil
  • 1 large onion, finely chopped
  • 300 g chicken breast fillet, finely chopped
  • 2 medium-sized carrots, peeled and chopped
  • 1 zucchini, finely chopped
  • 2 teaspoons of curry powder
  • 1 teaspoon paprika powder
  • 1 teaspoon tomato paste
  • 2 chili peppers
  • a pinch of nutmeg
  • 1 teaspoon paprika
  • 400 g canned tomatoes
  • 400 ml of water
  • 1 kg of cassava tubers
  • 1 kg of plantains

1. Heat the rapeseed oil and sweat the onion in it until translucent.

2. Add the chicken breast fillet and the carrots and fry well all over.

3. Add the zucchini, curry powder, nutmeg, paprika powder and tomato paste and mix well with the chicken.

4. Cut the chilli peppers into rings and add to the vegetables. Mix the canned tomatoes.

5. Bring the stew to a boil, reduce the heat and simmer covered for another 12 minutes.

6. In the meantime, prepare the fufu. Rinse, peel and roughly dice the cassava bulbs. Bring the water to the boil, add 1 teaspoon of salt and cook the cassava tubers in the water until soft. Peel the bananas, roughly cut them and finely puree them together with the cooked cassava tubers.

7. Shape the fufu into balls and serve with the stew.

Preparing fufu with fish recipe

The next recipe for fufu with fish is super easy and also well suited for complete beginners. In terms of taste, it is in no way inferior to gourmet dishes and offers true West African enjoyment. These are the necessary ingredients:

  • 1 kg of cassava tubers
  • 1 kg of plantains
  • 2 tilapia fish
  • 3 tbsp seasoning mix for fish
  • 1 small chilli pepper (pitted)
  • 1 bell pepper
  • 1/2 onion
  • 1 tsp Utazi (spice, optional)
  • a handful of basil
  • 1 dry Aridan fruit (clean thoroughly!), Optional
  • 4 cups of water
  • 200 ml fish broth
  • Salt to taste

Preparation:

1. Prepare the fufu. Rinse, peel and roughly dice the cassava bulbs. Bring the water to the boil, add 1 teaspoon of salt and cook the cassava tubers in the water until soft. Peel the bananas, roughly cut them and finely puree them together with the cooked cassava tubers. Shape the mixture into a ball and serve with the soup.

2. Wash the fish and pat dry. Cut the fish skin and season with salt.

3. Coarsely puree the bell pepper and onion and place in a deep saucepan. Thoroughly clean the aridan fruit, pat dry and add.

4. Pour four cups of water and the fish stock into the saucepan and bring to the boil. Add the fish and season the dish as you like.

5. Bring the soup to the boil briefly and then reduce the heat. Simmer for about 15 minutes, pouring the soup over the fish from time to time.

6. Season the dish with the Utazi spice and basil.

7. Garnish the soup with the fufu.
