  • 70 g dried tomatoes, finely chopped
  • 2 teaspoons of pine nuts
  • 100 g Carnaroli rice
  • 75 g dried porcini mushrooms, packed in a bag

In addition, you need the following fresh or moist ingredients, which the recipient must add during preparation.

  • 1 shallot, finely chopped
  • 2-3 cloves of garlic, pressed
  • 1 teaspoon olive oil
  • 1/2 teaspoon butter
  • 4 cups of chicken or vegetable stock
  • 1 tbsp vegetable oil of your choice
  • 100 ml dry white wine
  • 100 g parmesan, grated

Preparation:

  1. Remove the porcini mushrooms from the jam jar.
  2. Pour 500 ml of warm water into a bowl and soak the mushrooms in it for about half an hour.
  3. Remove the porcini mushrooms from the bowl, keeping the water in the bowl.
  4. Put vegetable oil in a deep saucepan and sauté the shallot and garlic in it over medium heat.
  5. Add the contents of the jam jar. Sauté for 5 minutes, stirring constantly.
  6. Deglaze with the white wine and simmer for several minutes.
  7. Pour half of the vegetable stock and half of the mushroom water over the rice and simmer for 10 minutes, stirring constantly.
  8. Add the rest of the vegetable stock and mushroom water and simmer for another 10 minutes, stirring constantly.

You can of course vary the risotto as you like and replace the porcini mushrooms with dried vegetables.

  3. Reduce the heat and add the rice mixture to the water.
  4. Simmer the dish under the lid and over low heat for 30 minutes.
