Ingredients for 4 servings:

1 dried chilli

½ red onion, peeled and finely chopped

the leaves of a small sprig of tarragon, chopped

1 egg, size L.

1 handful of breadcrumbs

1 teaspoon Dijon mustard

2 tbsp parmesan, grated

1 pinch of nutmeg, ground

400 g ground beef

Oil for frying

salt

ground black pepper

1 romaine lettuce

4 plum tomatoes

1 cucumber

4 ciabatta rolls

4 large pickles

Preparation:

1. Place the red chilli in a mortar, grind with the pestle and then mix in a bowl with the onion, tarragon, egg, breadcrumbs, Dijon mustard, parmesan, nutmeg and ground beef. Knead the meat well and form four equally sized patties. It is best to place the patties in the refrigerator or freezer for 30 minutes so that they become firmer.

2. When the burger patties are ready, heat a frying or grill pan to the highest setting and brush with oil. Season the burgers with salt and pepper and fry for about 10 minutes, turning them gently every 1-2 minutes so they don’t break off. If you prefer the meat cooked through, fry the burger meat for another 3-4 minutes.

3. In the meantime, cut the romaine lettuce, tomatoes and cucumber, mix and set aside. When the burgers are done, cut the ciabatta rolls in half and toast them briefly in the grill pan or in the toaster. Now, place the burger patties between the rolls and serve with the salad and the pickles.

1 can of chickpeas, approx. 400 g

1 can of sweet corn, approx. 340 g

½ a bunch of fresh coriander

½ teaspoon paprika powder

½ teaspoon ground coriander

½ teaspoon ground cumin

1 lemon

3 heaped tablespoons of flour plus extra for dusting the work surface

Rapeseed oil

1 small lettuce

2 large ripe tomatoes

Preparation:

1. Drain the chickpeas and sweetcorn, then place in a blender. Add half of the coriander leaves and all of the stems.

2. Add the spices, flour, a pinch of sea salt and the grated lemon peel and then mix briefly so that the ingredients mix together. However, it should not result in a smooth consistency.

3. Dust the countertop with flour and pour the mixture on top. Shape four equally sized patties and place in the refrigerator for 30 minutes.

4. After the cooling time, heat a pan on medium heat and fry the vegan burger patties for about 5 minutes on each side, until they are golden brown and cooked through.

5. In the meantime, wash and dry four lettuce leaves. Then cut the tomatoes into fine slices.

6. Now halve the rolls and toast as desired. Then brush each lower bun with a little ketchup and place the patties on top. Place some tomato slices, a leaf of lettuce and a few coriander leaves on top and serve with French fries or salad.
