Below you will find the classic recipe for chili con carne according to Jamie Oliver. The celebrity chef prepares the chilli with beans and chickpeas and serves it with basmati rice and natural yoghurt.

Ingredients for 6 servings:

2 medium onions

2 cloves of garlic

2 medium-sized carrots

2 stalks of celery

2 red peppers

olive oil

1 heaped teaspoon of chili powder

1 heaped teaspoon cumin powder

1 heaped teaspoon ground cinnamon

1 x 400 g can of chickpeas

1 x 400 g can of kidney beans

2 x 400 g cans of chopped tomatoes

500 g minced beef

1/2 bunch of fresh coriander

2 tbsp balsamic vinegar

400 g basmati rice

500 g natural yogurt

1. Peel the onion, garlic, carrots and celery and cut into small cubes. Halve and core the peppers, remove the stalks and roughly chop.

2. Heat two tablespoons of olive oil in a large saucepan over medium heat. Add the chopped vegetables along with the chilli powder, cumin, cinnamon and a large pinch of sea salt and black pepper each and sauté for about 7 minutes or until everything is soft, stirring regularly.

3. Drain the chickpeas and kidney beans and place in the saucepan. Pour the tomatoes into the dish and fill one of the empty cans with water and add to it. Add the minced meat and chop large pieces.

4. Pluck the leaves of the coriander and set aside. Finely chop the stalks and add to the dish. Season with balsamic vinegar, sea salt and pepper.

5. Bring the chilli to a boil, then place on low heat and simmer with the lid ajar for about 1 hour. Stir occasionally.

6. Shortly before the Jamie Oliver Chili con Carne is ready, cook the basmati rice according to the instructions on the packet. Serve the dish with the rice, a piece of bread, some yoghurt and a few lime wedges for seasoning. Drizzle with the coriander leaves and fresh chilli if you like. The Mexican dish goes well with homemade guacamole.

2 dried chilies, e.g. B Chipotle

2 large red onions

4 cloves of garlic

1 large bunch of fresh coriander

3 fresh red chillies

2 carrots

1 1/2 tbsp sweet, smoked paprika powder

1 cinnamon stick

1 tbsp cumin seeds

500 g minced beef

500 g minced pork

4 x 400 g cans of peeled tomatoes

3 colored peppers

2 x 400 g cans of kidney beans

1. Pour boiling water over the dried chillies in a bowl and let them rehydrate.

2. Peel the onions and garlic cloves and cut them into cubes. Pluck the coriander leaves and then finely chop the stems. Core the fresh chili peppers and cut into fine slices.

3. Place a large dry saucepan on medium heat and then add a tablespoon of olive oil, followed by the chopped onions, coriander stalks and most of the fresh chillies. Simmer for 10 minutes until the onions are translucent.

4. Peel and dice the carrots and then stir into the glassy onions along with the chopped peppers, the cinnamon stick and half of the cumin seeds. Fry for about 5 minutes.

5. Drain the rehydrated chillies and cut into small slices. Set aside the leftover water. Then stir in the chillies and meat in the pan and cut into pieces with a wooden spoon. Season to taste and fry for about 5 minutes or until the liquid has evaporated and the meat turns brown.

6. Add the retained water and the tomatoes from the tin and chop larger pieces with the wooden spoon. Season to taste and bring to the boil. Let the dish simmer on low heat for between 1 and 2 hours or until the sauce thickens.

7. In the meantime, roast the peppers whole until the pods turn black on all sides. Then place in a bowl, cover with cling film and let steam. When the peppers have cooled a little, peel off the skin, remove the seeds, cut into strips and add to the chilli.

8. If there are only 5 minutes left to cook the Jamie Oliver Chili con Carne, heat a dry pan over medium heat and briefly toast the remaining cumin seeds. Then add a little oil, drain and add the kidney beans. Swirl the pan several times until the beans start to pop open. Season to taste, sprinkle with fresh coriander leaves and arrange in a small bowl for serving.

9. Season the chilli to taste, remove the cinnamon stick and then sprinkle the remaining fresh chillies over it. Serve with the roasted kidney beans, sour cream or other side dishes of your choice.
