4. Poached egg and avocado on toast

2 slices of bread (rye, spelled or whole grain bread)

2 eggs

1 avocado

1/2 red onion (finely diced)

1 cup cherry tomatoes (halved and quartered)

1/4 cucumber (cut into very small squares)

1 cup of spinach (finely chopped) – optional

4 tbsp healthy omega mix (mixture of sesame, pumpkin, sunflower and flax seeds)


Peel the avocado, place in a bowl and puree until smooth with a fork or a potato crusher. Add onions, tomatoes, cucumber, seed mix and spinach. Bring a saucepan full of water to the boil, add the eggs to the water and poach for about 2-3 minutes. In the meantime, toast two slices of bread and cover evenly with the avocado mixture. Place the poached egg on top and enjoy.
