Ingredients (for 4 servings):

  • 500 ml watermelon juice (approx. 600 g watermelon pulp, pitted and diced)
  • 30 g cornstarch
  • 40 g of sugar
  • ground cinnamon
  • Ground carnations
  • vanilla
  • a handful of pistachios (unsalted)
  • 2-3 pieces of dark chocolate
  • a handful of jasmine flowers or jasmine essence (optional)

Make watermelon pudding yourself as a dessert

Puree the watermelon and pass the pulp through a fine-mesh sieve. Alternatively, you can use a juicer. Set aside for a moment.

Optional: For a special aroma, let the jasmine flowers soak in part of the juice for about 1 hour, then dispose of the flowers.

Place the cornstarch in a small or medium saucepan, then gradually add the watermelon juice and stir to work it in. Do not add too much juice at once to avoid lumps.

Add the sugar, some cinnamon, clove powder, vanilla and 1 drop of jasmine essence and stir well until the sugar is dissolved.

Then put the saucepan on medium heat and bring to a boil. Reduce the heat and cook for about 15 minutes, stirring frequently.

Pour into 4 small glasses, let cool completely and put in the refrigerator for a few hours or overnight.

Serve the watermelon dessert cold in the glass with a pinch of cinnamon, a few chopped pistachios, grated dark chocolate and more jasmine flowers for decoration.

Ingredients for 10-12 small glasses:

For the watermelon syrup:

  • 100 g of sugar
  • 125 ml of water
  • 1/2 cup of watermelon puree
  • 1 leaf of mint

For the panna cotta:

  • 1/2 cup of watermelon syrup
  • 500 ml whipped cream
  • 30 g of sugar
  • 2 tablespoons of gelatin
  • Pink food coloring (optional)
  • Watermelon extract (optional)

For the syrup, mix the water, sugar, watermelon puree and mint leaf in a small saucepan and cook over medium heat for 20-30 minutes until the sugar has dissolved and the consistency thickens. Take off the stove. Remove the mint leaf and set the syrup aside to cool.

Prepare the gelatin in a small bowl and set aside.

Mix the cream, sugar and cooled watermelon syrup in a saucepan. Bring the mixture to a boil over medium heat, then remove it from the heat.

Stir in the melted gelatin while stirring constantly. Add food coloring and watermelon extract if a darker color and stronger watermelon flavor is preferred.

Pour the mixture into the jars and put them in the refrigerator for 4-6 hours.

Ingredients for 6-8 glasses:

  • The pulp of 1/2 watermelon, pitted and pureed in a blender (approx. 1 liter of watermelon juice)
  • 200 g chia seeds

For the topping:

  • 1 large mango, diced
  • 2-3 kiwis, sliced
  • Coconut milk for drizzling
  • chopped fresh mint
  • roasted coconut
  • honey

Watermelon Dessert Vegan Chia Pudding

Combine watermelon juice and chia seeds in a large bowl. Stir until everything is well mixed. Cover and let stand in the refrigerator for at least 4 hours or overnight.

Ingredients for 10 glasses:

  • 1/2 watermelon, pitted and diced
  • 1 teaspoon of finely grated lime zest
  • 3 tablespoons of chopped mint, plus whole mint leaves for garnish
  • 300 g mascarpone, at room temperature
  • 180 g whipped cream
  • 3 tablespoons of sugar
  • 1 tablespoon plus 1 teaspoon of freshly squeezed lime juice
  • 1 teaspoon of pure vanilla extract
  • Lime slices, for garnish

Mix the watermelon, lime zest, and chopped mint in a bowl. Chill until it’s chilled.

Mix the mascarpone, cream, sugar, lime juice and vanilla in a bowl. Beat with an electric mixer on low speed until frothy. Do not hit too much.

Spoon a layer of watermelon into champagne or wine glasses and pour 1-2 tablespoons of the cream with mascarpone over it. Add another layer of watermelon and mascarpone and cover with a final layer of watermelon. Garnish with mint leaves and lime wedges and serve.

If you wish, you can add a layer of cake or ladyfingers to make a kind of English trifle with watermelon.
