Easter cake recipe – Bake a coconut cake in the shape of a rabbit

This effective Easter cake recipe with coconut and pineapple will provide a little variety and goes perfectly with Easter because it has a beautiful rabbit shape. We offer you two variations of the cake – with a rabbit template or divide the round cake in the middle and glue and decorate the two halves so that they look like a rabbit hidden in the grass.

Ingredients:

For the cake:

  • 2 1/2 cups of flour
  • 2 1/2 teaspoons of baking powder
  • 1 teaspoon salt
  • 1/4 cup of finished (or homemade) coconut cream
  • 225 g pineapple compote, strained in the juice
  • 1 tbsp vanilla extract
  • 1 1/2 cups of sugar
  • 1/2 cup soft butter or margarine
  • 3 large eggs

Coconut butter glaze:

  • 3/4 cup sugar
  • 1/2 cup of flour
  • 1 cup of coconut cream
  • 2 tbsp coconut cream
  • 2 teaspoons vanilla extract
  • 1 cup unsalted, softened butter

For decoration:

  • 2 2/3 cups or 200 g of sweetened desiccated coconut
  • 2 pink almond dragées
  • 1 blue jelly bean
  • 1 red, heart-shaped sugar decoration for cakes
  • 2 x lacquer scoring cord (approx. 5 cm long)

preparation Easter bunny cake:

  1. Preheat the oven to 175 degrees. Grease and flour a baking pan (33 x 22 cm).
  2. The cake: Mix the flour, baking powder and salt together. Mix the coconut cream, the pineapple with the juice and the vanilla extract in a measuring cup.
  3. In a large bowl, stir the butter and sugar together for 3 minutes until creamy. Gradually add the eggs on a low heat.
  4. Gradually add the flour mixture and the pineapple mixture, starting and ending with the flour.
  5. Put the finished dough in the prepared baking pan and bake for 25-30 minutes (toothpick test). Let cool for 10 minutes, remove from the mold and let cool down completely.
  6. The coconut butter glaze: Mix sugar and flour in a saucepan. Gradually stir in the coconut cream. Bring to the boil over medium heat until thick. Stir more often. Cook over low heat for 2 minutes, stirring constantly. Remove from the heat, stir in vanilla extract and let cool.
  7. In a large bowl with the mixer on medium heat, beat the butter until frothy, gradually add the coconut cream mixture.

  1. After the cake has cooled completely, place on a cake plate. Use a knife and the template to cut the rabbit’s ears and body. Crumble the excess and sprinkle it on the tail and ears to make them taller. Spread the icing on the top and sides of the cake and sprinkle with desiccated coconut. Slightly press in the coconut flakes. Decorate the rabbit’s ears with dragées, the eye with the jelly bean and the mouth with the sugar heart. Use the lacquer syringe for the whiskers. Your done is Easter bunny cake.
