  4. Make 5-6 packs by placing two large pieces of aluminum foil on top of each other. Coat this with a thin layer of olive oil.
  5. Place the wedges in a row in the center of each pack, leaving some space between the wedges. Fold the ends of the package tightly over the potatoes and double the sides. Make sure that the packs are tightly closed.
  6. Place the parcels on the grill rack or in the embers and let everything become tender. The potatoes will start turning black after about 12 to 14 minutes. Turn the packets over once and repeat with the other side.
  7. Take the packets off the grill and open them all with a fork (be careful, they are hot!). Let cool for 5 minutes.
  8. Whisk the ingredients for the dip in a medium-sized bowl and either drizzle on the sweet potatoes or use as a dip.
  9. Garnish with coriander.
